If you have an Air Fryer then you know how awesome they are, cutting cooking times for an endless number of recipes; and if you don’t have one you probably don’t know they’re more than just a “healthy alternative to frying”, and that's where we come in...
Introducing Briscoes' Air Fryer Eats, our latest series featuring iconic Kiwi foodies, creating classic Kiwi cuisine.
To Create Easy Your Pavlova:
Line your air fryer drawer with tin foil, then baking paper.
To a stand mixer, add:
• 4 egg whites - beat to a soft peak
• 1 cup caster sugar - add gradually to beaten egg whites
• 3 teaspoons cornflour
• 1 tsp white vinegar
• 1⁄4 tsp vanilla extract
• 2 drops pink gel food colour (optional) - fold through egg and sugar mix
Air fry at 150°c for 20 minutes.
When finished, slightly open air fryer drawer and leave to cool (approx. 20 mins).
Decorate with:
300 ml cream
1/4 cup icing sugar
1/4 tsp vanilla extract
2 drops pink gel food colour (optional)
Beat on high until cream is whipped
Decorate and enjoy!
Battling it out in Episode 1 is foodie, Albert of @EatLitFood, taking on our beloved Briscoes Lady in the battle of the classic Kiwi pie.

Ingredients (Makes 4):
4 sheets of pre-rolled puff pastry (or 450g)
4 eggs
1 cup chopped ham
4 rashes of streaky bacon
1/3 cup grated cheese
Salt and pepper to season
Flour for dusting
Egg wash, 1 egg whisked with 1 Tbsp milk
Method:
Heat the air fryer to 180 degrees. Cook the bacon in a single layer for 8 minutes until golden in colour. Remove and chop roughly.
Place the pastry sheets onto a lightly floured bench. For the inside of the pie, tip the tins upside down and cut it 1.5 cm bigger than the dish. Move the tin over and cut around the edge of the tin for the top.
Place the larger piece of pastry into the base of the tin. Fill with bacon, ham, egg and cheese. Season with salt and pepper.
Dampen the edges with water and place on the top. Brush with egg wash. Use a fork to crimp the edges. Cut a few slits in the top to let the steam escape. Decorate with leftover pastry cut into shapes.
Place the pies into the Air Fryer and cook for about 15-20 minutes, until golden and the pastry puffed.
